Looks like you're in luck I love this music but never took the time to come any further then bob and skatalites  I'm still exploring dub, but I actually buy King Tubby CDs, just so I can play them on my stereo stack at home. None of his songs disappoint, quite rightfuly the king and creator of dub. So I'll just recommend him as an artist. Cardboards beat me to a few essentials I had in mind, but I think I have a couple to add.
Argh I would have loved a thread like this about two years ago, it would have been magic. Mark Lemar did a beginners guide to reggae on the BBC radio 6, that was excellent, he got to interview Toots Hibbert. If anyone knows when I can download that show tell me!
