We made pizzas with friends. Honestly, I simply forgot to take photos of the process and even of the final result, but we ended up with 6 awesome different pizzas. Ingredients that you can't see in photos include a lot of different types of cheese (mozarella, local regular "cheddar", gouda, 3 separate "pizza cheese", blue cheese, etc), pineapples, 2 separate tomato sauces, ketchup and.. mm... beer, cider? Recipe, well, it was pretty straight-forward. We made the dough from flour, water, yeast, olive oil and let it rise a bit. Some pizzas ended up being covered with so many ingredients they looked more like cakes. ![]() |

So I went out and finally bought myself a pasta machine. I've been saving the pennies. So here is my first attempt: Spinach and Ricotta Ravioli Ingredients: For the filling (Serves 2) 200g Baby Spinach knob of butter 100g of Italian Ricotta cheese 1 egg yolk salt and pepper to taste For the pasta dough (Serves 4) 200g pasta flour or 00 plain flour 2 eggs pinch of salt Method: For the filling I melted a knob of butter in a pan Attachment: IMG_1297.jpg [ 188.82 KiB | Viewed 5877 times ] Attachment: IMG_1298.jpg [ 187.47 KiB | Viewed 5877 times ] Attachment: IMG_1300.jpg [ 236.12 KiB | Viewed 5877 times ] Attachment: IMG_1299.jpg [ 155.48 KiB | Viewed 5877 times ] Attachment: IMG_1301.jpg [ 198.05 KiB | Viewed 5877 times ] Sift out the flour and the pinch of salt onto a flat surface, make a well and crack the 2 eggs into the middle Attachment: IMG_1305.jpg [ 199.73 KiB | Viewed 5877 times ] Attachment: IMG_1307.jpg [ 157.22 KiB | Viewed 5877 times ] Here's my new pasta machine ![]() Attachment: IMG_1308.jpg [ 174.07 KiB | Viewed 5877 times ] Attachment: IMG_1309.jpg [ 154.36 KiB | Viewed 5877 times ] Attachment: IMG_1310.jpg [ 160.96 KiB | Viewed 5877 times ] Attachment: IMG_1311.jpg [ 162.56 KiB | Viewed 5877 times ] Attachment: IMG_1312.jpg [ 176.88 KiB | Viewed 5877 times ] Unfortunately I was so excited about the dish that I forgot to take a photo. I basically served it with freshly shaved parmesan and some fresh basil. So because I forgot to take the grand finale photo, the next day, with the remaining pasta I made some spaghetti Attachment: IMG_1313.jpg [ 189.31 KiB | Viewed 5877 times ] I chopped up some garlic and slowly heated it in olive oil then added a large fresh chilli. Just to add an extra flavour I cooked 3 large king prawns in the garlic and chilli oil then added a few normal prawns too. I then cooked the pasta for about 2mins in boiling salted water and served. Father's Day Apple and Blueberry Crumble - Balls Style i.e. badass I made my father an apple crumble today, but i couldn't take any photo's of me preparing it, because it was meant to be a fucking secret alright!!! Jeez! anyway, recipe is piss easy, so if you need pictures i will draw them in crayon for you hater! Ingredients For the filling - 900g Braeburn apples (i use non cooking apples because they retain there shape better and dont have the texture of wet cake) - 300g Blueberries - 175g demerara sugar - 2 lemons (zest and juice) For the topping -225g plain flour -175g butter (keep that shit cold) - 55g demerara sugar - 125g oats - 2 digestive biscuits (smashed) 1. Soak your fruit! Core, skin and chop all your apples and place them in a bowl. Zest your lemons into the bowl and juice both of them too, to stop the apples browning. Grab half your blueberries in your hand and crush them like they were your worst enemies nuts. Then chuck the rest into the bowl. Mix with the sugar and leave to one side. 2. Make your crumble! Mix all your dry ingredients together, then chop your butter into hard cubes. Using you fingers, mix in the butter till your mixture looks like coarse sand, but don't sweat it if you have some lumps, fuck it, this isn't the ritz. 3. Pre-bake your crumble! Now if you pro like me, you can go a step further, if you wanna give up now? Just just the at dry stuff on the wet stuff in a dish and cook it in the oven for 25-30 mins or until golden brown and bubbling! Thought so, get yourself 4 pro chef rings like these! (9cm x 6cm) ![]() Now line a baking tray with grease proof paper, and then cover with your crumble mixture. Pat down a little bit so it becomes one even-ish layer, and bake in the oven at 200dc for 10-15mins! thats pre-baked! then pull it out, it shud be a bit soft still, and cut out 4 cookie shapes with your big metal ring! Now get your 4 rings, grease up your rings with lots of butter, place them on a baking tray, and spoon in 2/3 full with your fruit mix! Then chuck a crumble lid on, and bake in an oven for 20mins! Then you get this > Attachment: DSC01716.jpg [ 209.92 KiB | Viewed 5754 times ] ![]() |

My pictures are a huge fail. It was a last moment idea, I rushed, trying a new camera, enough excuses? On with the recipe. Manicotti. Can be made many different ways. Today I uses broccoli.
Microwave the frozen broccoli 5 mins.
Chop the onion, garlic, and broccoli
Combine in a bowl, the chopped stuff, ricotta cheese, 2 eggs, mix well.
Stuff the manicotti noodles with the mixture.
Cover with sauce, tinfoil, oven at 350F (180C) for 50mins.
Check noodles for softness, cook longer if not soft. When soft, top with mozzarella cheese, cook until melted.
Serve.
I was wishing I had added a bunch of basil to the cheese mix. I've used spinach with good result, would like to use sausage next. Cooking is chemistry. (edited the size of the pics. Sorry!!) |

Wooo, some quick lunch pasta! ![]() - Tomato sauce on a pan with chopped onions, stir it regularly on low heat until the onions get softer. - Get water with some salt to boil in a pot. - Put the holy appendixes of our Aviant Pasta Monster in the water, let them boil for around 7 minutes, usually until you can break one spaghetto in half by pressing it against the pot wall with your object of stirring. - Out goes the water, in goes the sauce boss mix. - Add mozarella - Serve infront of your computer by youself like the forever-aloner that you are. ![]() |
