hmmm, i remember my student days.... (i fucking hope so, it was like 5 years ago) ... mainly lived off pasta, and ... pasta? i think and weed.... ![]() Also, one of my housemates did "real cooking" which consisted off lots of lovely fresh vegetables, cooked to fuck, cheese on top, grilled, then smothered in a whole bottle of ketchup... which smelt vile and looked like paris hiltons anus after a busy weekend.... serious, i hope the bitch is dead... |

My proper cooking consisted of steamed vegetables, mashed potatoes and chicken. The only vegetables that I've had in two weeks that weren't tomatoes. Everything was undercooked except for the chicken ![]() I'll stick to dolmio sauce and pasta |

Post subject: | Re: SpA Cuisine |
fuck that dolmio shit, not literally.... just get tinned tomatoes and a few erbs and spices ^^ |

We've got student restaurants over here. €3.50 for a hot meal every day and there's always a choice between meat, chicken, fish and vegetarian. It's nothing like the food at home, but it's hot, nutritious, cheap and easy. |

Yes it's me again...... ![]() So my flatmate's dad caught a nice piece of trout; locally may I add, it was then smoked and given to us nicely filleted. Here is one of the fillets: Attachment: IMG_0747.jpg [ 125.83 KiB | Viewed 3498 times ] For the reduction: 2 tbsp white wine vinegar 150 ml dry white wine 1 tbsp chopped tarragon (I used dry tarragon) A couple of shallots, finely diced For the sauce: 2 egg yolks 200g butter, melted So first of all I put the butter on a low heat to melt down gently: Attachment: IMG_0742.jpg [ 103.92 KiB | Viewed 3498 times ] Attachment: IMG_0743.jpg [ 121.75 KiB | Viewed 3498 times ] Attachment: IMG_0750.jpg [ 114.82 KiB | Viewed 3498 times ] Attachment: IMG_0745.jpg [ 146.01 KiB | Viewed 3498 times ] Attachment: IMG_0748.jpg [ 151.6 KiB | Viewed 3498 times ] Now it's time to add the butter. But before you do that you need to scrape away any foamy butter from the top. You only pour in the clear liquid. Take the bowl off the heat and whisk in the butter by pouring it in little by little until you have used all of the clear butter. And there's the Bearnaise sauce: Attachment: IMG_0752.jpg [ 118.67 KiB | Viewed 3498 times ] To go with the fish and Bearnaise sauce I boiled up some Charlotte potatoes: Attachment: IMG_0746.jpg [ 137.79 KiB | Viewed 3498 times ] Attachment: IMG_0753.jpg [ 147.4 KiB | Viewed 3498 times ] Attachment: IMG_0754.jpg [ 171.22 KiB | Viewed 3498 times ] Oh and the fish I decided to dust it with seasoned flour and pan fry them: Attachment: IMG_0749.jpg [ 149.25 KiB | Viewed 3498 times ] ![]() |
