Ok, just wanna say, I reckon the thread should have some laissez faire rules.

1. Photos - showing each step isn't necessary but perhaps useful for showing how things should prepared if it isn't obvious and kind of complicated/integral to the dish and there definitely should be a photo of the finished thing. - although i've got a shitty camera phones :S

2. Ingredients and Weights - be nice to get these listed out and organised nicely - perhaps also alternatives for cheaper versions or vegetarians etc.

3. I'm gonna shit a RAGING SQUIRREL! if someone posts just baked beans on a plate. Not to mention vomiting up my own pelvis due to the fact im looking at baked beans. ERGH! (the one thing i am fussy about)

4. NO VEGANS! hehe :wink:

I made a lovely chorizo and rosemary risotto last night for my house mates. Normally i would make this with roasted/garlic infused butter nut squash but i couldn't get one, so i improvised with Petit pois to add the sweetness. I tried taking photos but my camera phone is still completely caked in petroleum jelly from the last photo shoot, so all my pics looked shit, plus its not my full recipe :(

I wouldn't worry about them being fancy Lim :) when i get round to taking good pictures, im gonna put up some simple recipes as well as the shit i plan to show off with so everyone can think im a pretentious twat ^^

Ok, so seeing as no-one has put any of their recipes up I have decided to put one of mine up. I had a dinner party last night and I cooked 4 pizzas all from scratch. And here's how I did it:

Dough:(prepared in the breadmaker)
water - 1 cup
butter (melted) - 1tbsp
sugar - 2 tbsp
salt - 1 tsp
flour - 2 3/4 cups
yeast - 1tsp

I prepared two lots of dough. The dough is about 500kg each so I cut it in two and rolled them into balls then let rest for about 20mins.

Whilst I was waiting for the dough to rise I made a start on the ragu. I heated up some olive oil in a pan and threw in a few cherry tomatoes.

In a pestle and mortar I crushed up 3 large cloves of garlic and a handful of fresh basil

I then added the tomatoes to the garlic and basil and crushed it all up. I took out the tomato skins and then transfered it all back to the saucepan on a medium high heat to reduce.
When the four dough balls were ready I rolled them out to fit my 12" pizza base trays. I oiled the trays to prevent the base from sticking.

For the toppings I went for the following:
1. Spanish Chorizo and Chestnut Mushrooms
2. Roasted Romano Peppers and anchovy paste
3. German Salami and red onion
4. Three cheese magherita

To roast the romano peppers I lightly coated them in olive oil and put them in the oven for about 20mins 180c until the skins were slightly black. Once cooled I took off the skins and got rid of the seeds. Oh and most of the guests turned their noses up when I told them it was anchovy paste but they soon changed their minds when they tasted it :wink:

I cooked the pizzas for about 10mins until they were almost cooked on about 180c, took them out of the oven and put some chunks of Buffalo Mozarella on them and a sprinkle of good olive oil.

Back in the oven until the cheese starts to bubble and brown. To serve I put some fresh basil leaves on top. Omnomnomnom

Not only do those pizza's look absolutely scrum-diddly-fookin-umptious! But I also enjoyed the pictures, which were rather professional looking.
