My usual chat advice to guests (and builders) is that if they don't know what to build, combine two things into one. Two random things that wouldn't normally go together. Not only can that be fun, it can also be challenging, and it is unlikely to have been built before.

Examples:

A mouse and an aeroplane.
A shoe and a bus.
A fish and a fireplace.
A hamburger and a baby.
A television and an alien.
etc
